The CEBO restaurant in Madrid’s Hotel Urban has received its first Michelin star, in recognition of the work of chef Aurelio Morales and his entire team.

This has confirmed the restaurant’s standing as one of the Spanish capital’s most outstanding gastronomy centres according to the prestigious Red Guide.

THE CEBO TEAM EARN THEIR FIRST MICHELIN STAR

After learning his trade in the avant-garde kitchens of elBulli, Tickets, Comerç 24 and Xavi Pellicer’s Àbac and serving as Paco Pérez’s right hand at Miramar for eight years, Aurelio Morales returned to his home town in early 2016 to head up our new and most ambitious restaurant project: the CEBO restaurant in the Hotel Urban.

In little over a year and a half this elegant and intimate restaurant has managed to position itself as one of Madrid’s leading gastronomy centres. All this is thanks to the impeccable service provided by Paco Patón and the evolutionary style of the chef.

 

 

PRODUCE-BASED SIGNATURE CUISINE

Aurelio Morales’s signature cuisine is based on Spanish seasonal produce and delves deep into the tastes of yesteryear. In fact, two of his most celebrated dishes, tripe croquettes and anchovies, stem from the culinary legacy of his grandmothers, one from Madrid and the other from Córdoba. These dishes allow you to appreciate his uncomplicated, free-spirited and contemporary technique. It is a style that is evident in both the tasting menu, which the chef defines as ‘the marriage of technique and produce’, and in the à la carte selection, which is ‘rooted in produce and tradition’.

For Aurelio Morales the achievement of this first Michelin star is, along with the support of the public, ‘the best recognition of the hard work done by the entire team, not just the CEBO team, but also the Derby Hotels Collection and Hotel Urban teams’.

Diners at CEBO are treated to a truly luxurious setting in which to enjoy the restaurant’s solid culinary proposal. The space is exquisitely lit and decorated in an elegant and welcoming style by Koke Clos. An intimate atmosphere is a hallmark of the restaurant thanks to the carefully-designed layout of its tables and discrete, invisible and dynamic service.

 

 

OUR COMMITMENT TO GASTRONOMY

As an icon of contemporary luxury in Madrid the Hotel Urban has shown its strong commitment to gastronomy by first opening CEBO and now hiring the recipient of three Michelin stars, Ángel León, to run Glass Mar.

This commitment to cuisine forms part of a global strategy implemented throughout the entire group. We have reopened the La Terraza del Claris, a project also led by Aurelio Morales, and we have created the KOKKA, BIG KOKKA and Palosanto spaces.
