Coinciding with the winter season, Hotel Urban 5*GL presents the new Glass Bar menu, featuring a renewed proposal of signature cocktails and bites created by Javier Sanz and Juan Sahuquillo, chefs of CEBO, Michelin star holders: a perfect plan to enjoy Madrid. 

Bites by CEBO and signature cocktails: the perfect pairing
For these months, Urban has developed a pairing menu designed to surprise the most demanding palates, where the Bites by CEBO perfectly match the Glass cocktails, curated by Marc Álvarez of Sips.

The menu includes up to ten combos, adaptable to each guest’s preferences. Among the standout proposals are Double bluefin tuna taco + Bloody Berry, where the acidity and fruity notes of the cocktail cleanse the richness of the tuna, adding an elegant contrast to its deep flavor; Cornetto Steak Tartare + Krypta, in which the aromatic complexity of Krypta complements and enhances the intense flavors of the tartare; Chocolate + Petit Grain, where kefir lime and chocolate mint balance the bitterness of cocoa, while the creaminess of the crème brûlée and the coconut filling make this combination a perfect match; and Cañickers + Espresso Martini, where coffee notes enhance the chocolate and corn nuts of the bite, making it even more appealing and flavorful.

Other options include Carrot and rabbit + Last Word; Oyster and its pearl + Black Dot; and Truffled grain-fed chicken croquette + Queens, among others.

This proposal, designed for sharing, allows guests to enjoy CEBO’s cuisine in a relaxed atmosphere, with the Glass Bar cocktails as the perfect pairing. With this bites menu, Javier Sanz and Juan Sahuquillo present a high-end gastronomic experience that evokes a cuisine of memories and unique flavors.

The bites and combos will be available both at lunchtime and in the evening, from 1:00 pm to 5:00 pm and from 7:00 pm to 11:00 pm.

Its iconic space, the Drinkery House—with nods to the city of the 1920s—offers a cocktail menu curated by Marc Álvarez of Sips, named ‘World’s Best Cocktail Bar’ in 2023.
